Healthy Freezer Fudge Recipe (Just 3 Ingredients!)

You’ve probably heard me say that eating healthy doesn’t have to be boring. I truuuuuuuly believe that when it comes to eating, nothing is off-limits—as long as you focus on optimizing eating ingredients that actually *nourish* your body.  

So what does that look like when you just want a sweet treat? For me, when I’m craving a dessert I try to have things that have more healthy fats in them because they mellow out that ol’ familiar blood sugar skyrocket (and crash!) that happens after eating most carb and sugar-heavy desserts.

Why add fat? Healthy fats are soooooooo crucial for our hormone health, skin health (buh-byeeeeee, wrinkles!), neurological health, and feeling actually SATISFIED with the foods we eat. We’re told to be so afraid of fat in our culture, but healthy fats in desserts help stabilize blood sugar which in turn reduces brain fog, hormone imbalance, and those classic lethargic feelings of a sugar crash. Fat is digested much more slowly & gradually than carbohydrates so when they are paired together, the fat subsequently slooooows the absorption of the carbs and tampers down that infamous “blood sugar spike.”

So, what is one of my favorite ways to satisfy that dessert craving while making sure you’re avoiding a blood sugar spike? Enter: freezer fudge. This is one of my FAVORITE dessert staples. I have to give credit where credit is due and say that this recipe was 100% inspired by the brilliant Kelly Leveque. I loooooooooove this fudge recipe because it’s delicious, SO. DANG. easy to make, and low carb + high fat, which stabilizes the blood sugar and leaves you feeling full and satiated. 

HEALTHY chocolate? Count me in. Without further ado, let’s dig into the recipe!

  • 1 cup coconut oil, melted

  • ¼ cup cocoa or cacao powder

  • 1-2 tablespoons pure maple syrup OR 8–10 drops liquid stevia or organic monk fruit to sweeten

  • ¼ to ½ cup almond butter or another nut butter (Optional if you desire a thicker consistency. Personally, I add this every time!)

  • A pinch of sea salt or Himalayan pink salt (Optional—but don’t knock it ‘til you try it! Adds such a delicious depth of flavor.)

  • You could also get CrAzYyYY, and sprinkle with coconut flakes, almond slices, walnuts, or any other fun topping you’d like! (Optional)

  • Melt the coconut oil and add to a mixing bowl.

  • Whisk in the cocoa/cacao powder and your sweetener of choice (and add the nut butter of your choosing here if you’re looking for a thicker consistency).

  • Pour the mixture into a small pan that will allow you for 3/4th-1 inch thickness of the mixture ORRRR I really like using this silicone ice cube tray for bite-size squares effortlessly!

  • Sprinkle with a pinch of sea salt on top.

  • Toss that bad boy into your freezer and wait only 15–20 minutes for it all to firm up.

  • Enjoy! Continue to store the fudge in the freezer & simply reach for one of these chocolate dreeeams whenever you’re looking for a sweet treat that won’t have you doing the blood sugar roller coaster 20 minutes later. :)

    That’s it! This is a beautiful grab-and-go sweet snack—just pop it out of the ice cube tray whenever you want something quick and sweet to satisfy those chocolate cravings.
